Additionally, it is called <a href="https://www.island-delight.co.uk/jamaican-patties/">Jamaican</a> Creole by linguists.</p>
<p><a href="https://www.island-delight.co.uk/jamaican-patties/">Jamaican</a> Patwa / Patois refers to the local dialect – a rough form of speech that developed back from the 17<sup>th</sup> century. Slaves turned the slaveholders dialect and vernacular on its head, forming their own language.</p>
<p>It sounds like English, but is not fully-formed due to <a href="https://www.island-delight.co.uk/jamaican-patties/">Jamaican</a> pronunciation and vocabulary are significantly different. Yes – there’s a lot of English derivatives and words, but mix it all up with West Africa’s creole and pidgin languages – and you get some idea.</p>
<p>So – now it’s the new school term, we’re taking a brief look at the lingo to see how much you know!</p>
<p>First – let’s do the alphabet phonetically, as pronounced in the language:</p>

<p>Yes – there’s a subject, a verb and an object, but they don’t agree like they do in English.  The verb doesn’t change with the subject. For instance, we have given a few examples:</p>

Dem run (they run)<br />
Eyah run (it runs)</p>
<p>&nbsp;</p>
<p><strong>Plurals<br />
</strong>In English, when there’s more than one of something, the ending changes of the word. Baby – babies; bag – bags; sheet –sheets  etc.</p>
<p>In patois, you pluralise something by adding ‘dem’ to the start of the word, or adding ‘nuff’ at the beginning.</p>

Nuff banana (many bananas)</p>

<h2><strong>Pronouns</strong></h2>
<p>There’s no difference between he and she in Jamaican Patois. Someone could say ‘im frack look good’ – and it means her frock (dress) looks good.<br />
Or ‘im fada gaan’ – his father’s gone.</p>

It was part of a trading circle – vessels from Canada and other parts of North America would arrive bearing wood and pickled or salted cod. And in return, they’d load up for the return journey with Caribbean goodies like sugar, salt, rum and molasses.</p>
<p>Salt fish also goes by other names too – baccala, dried fish, bacalhau or bacalao, and today, the majority of it is still imported – whether that’s cod fish or other types including shark, snapper and Pollock.</p>

<h2><strong>Preparing Salt Fish for Cooking</strong></h2>
<p>The idea of salting the fish is for preservation reasons (when it was loaded on the ships back in the early days, it needed to last!) The salt ‘cures’ the fish and dries it out – extracting every last bit of moisture.</p>
<p>And of course – to cook it, re-hydration is vital. This can be done by an overnight soak in hot water. The ultimate aim is to leave enough salt for flavour, but not so much it’s inedible.</p>
<h2><strong>Cooking Salt Cod</strong></h2>
<p>Caribbeans prefer to sautee the fish, with vegetables to add flavour. This usually includes hot peppers, tomatoes and onions – which not only adds flavour, but moisture too. And to accompany the fish, there’s usually a mixture of roti (chapati), ground provisions (such as yam, plantains, cassava) and rice. And if you’re really hungry, why not have it with bakes (fried dough) too.</p>
